Certified Angus Beef must excel in several categories before it can be "rolled" or marked with the Certified Angus Beef symbol. It must:
- Have a modest (Middle Choice) or higher marbling degree (only about 30% of AAA carcasses contain this high degree of marbling) to ensure juiciness and flavor.
- Be from the "A" maturity range (the youngest maturity classification for beef) to ensure tenderness.
- Must possess medium to fine marbling texture, to ensure every bite of Certified Angus Beef product is flavorful, tender and juicy. In a word, delicious.
